Our weekends are busier than the week, so I decided to simplify things for this weekend by making bagel toasties for lunch!
For the best flavours, this does require a bit of preparation, which can be done even a night before to safe time … or on the day…like getting the chicken out of the freezer a few hours before you’re going to make it, defrost for a couple of hours and let it cook in the oven covered, for 40-45 minutes or until done on a low heat setting…. Then all that’s left to do at lunchtime is to assemble it, toast and serve with your choice of crisp or salad….so much work, very difficult to cook…isn’t it….(don’t tell anyone otherwise…lolz)
So here I am with ..Grilled Bagel Toasties with Roasted Chicken, Mozzarella, Olive and Basil .
It is almost a no recipe – recipe, yet very satisfying, delicious and family friendly…I love making them for a quick on-the-go lunches and can say one thing for sure that, you will adore it too ….!
Must give it a try…what not to like about it any ways….A buttery and crispy grilled sesame bagel loaded with flavoursome herby chicken, creamy garlic mayo, crunchy olives, tomato, basil, melted mozzarella, salt and pepper…..and a dash of tabasco if you like it hot.
Super hearty, super simple….!
A buttery and crispy grilled sesame bagel loaded with flavoursome herby chicken, creamy garlic mayo, crunchy olives, tomato, basil, melted mozzarella, salt and pepper.....and a dash of tabasco if you like it hot.
- ................ Rosted Chicken...........
- 250 g Chicken breast or thighs..whole skinned
- 1 tbsp Butter
- 1 tbsp Oil
- 1/2 head of Garlic, unpeeled
- 1 tbsp fresh or dry Thyme
- 1 1/2 tbsp Lemon juice
- 1 tsp Lemon zest
- 1 pinch of Chilli Flakes (optional)
- salt and pepper to taste
- 3-4 Sesame bagels
- 1 cup fresh Basil
- 1 large Tomato, sliced
- 1/2 cup green and black olives..sliced
- 1 cup Mozzarella, sliced or grated
- 1 cup Mayonnaie
- Tabasco, optional...to taste
- salt and papper to taste
Preheat oven to 200 degrees C (400 degrees F).
Place chicken in a roasting pan with garlic and oil. Rub it with butter, lemon zest and thyme. Sprinkle salt, pepper chilli flakes(optional) and 1 tbsp lemon juice. Cook it covered, for 40-45 minutes or until cooked.
Once done, leave it aside for few minutes to cool down then cut it in to the bite-sized pieces. take out the roasted garlic in a separate bowl and squeezed the pulp out of the skin, mash and smooth it with a fork and keep it aside.
Prepare the tomato, olives and cheese. .
Pour Mayo in the bowl with the garlic mash, add few drops of lemon juice salt and pepper and mix it to a smooth paste...
Now the assembly.... turn the grill on to medium to hot , place the bottom bagel with a thick layer of garlic Mayo, topped with chicken, couple of tomato and mozzarella slices, olives , basil, salt and pepper and a dash of Tabasco (optional), Cover it with the top bagel layer and close the grill and cook it for 10 minutes or until crispy... turn it half way.
Now if you grilling it on a normal pan cover it with a heavy lid and follow the rest of the instructions as it is.
Serve it hot with your choice of crisp or salad! Enjoy
