Equipment

  • Deep Fryer or
  • Deep Skillet or

Ingredients
  

Chicken Brine

  • 6 pc bone-in chicken
  • 1 cup white vinegar
  • 1 cup tap water
  • 1 tbsp salt

Chicken Marinade

  • 1 tsp baking powder
  • 1 tsp white pepper
  • 2 tsp garlic paste
  • 1 tbsp chilli sauce or Sambal Oelek or Sriracha
  • Salt to taste

Chicken Coating

  • 2 cups all-purpose flour
  • 1 tsp dry oregano
  • 1 tsp cayenne pepper or red chilli powder (adjust according to your spice preference)
  • Salt and pepper to taste
  • 2 cups water in a deep bowl at room temperature
  • Vegetable oil for frying

Instructions
 

Brining the Chicken

  • In a large bowl add the chicken pieces, poke it with a pointy knife few times, sprinkle salt and pour the vinegar and water over, ensuring they are fully submerge
  • Cover the bowl and let it marinate in the refrigerator for ½ hour to 1 hour. This step tenderises the chicken and infuses it with flavour.

Marinating the Chicken

  • Rinse the chicken with fresh water, move the skin down from the meaty part of all the drumsticks and add a few vertical slits with a sharp knife. Cover them with the skin again and keep it aside. this step will help to cook it thoroughly.
  • Sprinkle baking powder, salt, and pepper.
  • Add garlic paste and chilli sauce. mix well, cover and leave it to marinate for at least ½ an hour.

Double-Dip Technique

  • Season the flour with salt, pepper, paprika, cayenne pepper and dried oregano, and mix it well.
  • Add 2 cup water to a deep bowl and keep next to the flour mixture.
  • Coat the chicken in the seasoned flour mixture, making sure to press it onto all sides.
  • Dip the coated chicken into the water and coat it again in flour.
  • Back in the water again, and let any excess liquid drip off.
  • Finally, place the chicken back into the flour mixture and coat it for the second time, pack the chicken well in flour by pressing firmly from all sides to ensure an uneven and thick coating.

Frying the Chicken

  • Heat vegetable oil in a fryer or deep skillet or Dutch oven to approximately 175°C (350°F). The oil should be deep enough to fully submerge the chicken pieces.
  • Carefully place the double-dipped chicken into the hot oil.
  • Fry the chicken for about 10-12 minutes, then carefully flip each piece using tongs.
  • Continue frying for an additional 10-12 minutes or until the chicken is golden brown and reaches an internal temperature of 74°C (165°F).

Resting and Serving

  • Once the chicken is cooked to perfection, remove it from the oil and place it on a wire rack or paper towels to drain any excess oil.
  • Allow the chicken to rest for a few minutes before serving, which helps retain its juiciness.
  • Serve the double-dip crispy fried chicken alongside your favourite dipping sauces and sides, like coleslaw, chips or waffles and a drizzle of maple syrup for a complete meal that will satisfy any craving.
