Creamy Garlic Mushroom Chicken || with Truffle oil

Weeknight dinners can be a challenge for many people. After a long day of work, school, commuting, and other responsibilities, the last thing you want to do is spend hours in the kitchen preparing a complicated meal. However, with a little planning and some simple ingredients, it is possible to create easy, delicious and satisfying meals that are perfect for busy weeknights.
One of the keys to successful weeknight cooking is to keep it simple. Choose recipes that require minimal prep and cooking time and use easy-to-find and prepare ingredients. This doesn’t mean that you have to sacrifice flavour or creativity, but rather that you should focus on easy, healthy, and satisfying dishes.
Here are some tips and ideas for easy Weeknight home cooking planning:
  • Plan ahead: Spend some time planning your recipes, groceries and what you fancy eating that week or if on some kind of special diet, arrange your grocery list accordingly. This will help you save time and reduce stress during the week, as you won’t have to spend time thinking about what to make for dinner each night. I keep my online grocery list open on my nearest supermarket’s app and repeat the basics list every week and add and subtract food as per my next week's meal prep or recipes before finalising the order.
  • Use a slow cooker: Slow cookers are the way to go to prepare delicious meals with minimal effort. Simply throw in your ingredients in the morning, and come home to a warm and comforting meal in the evening.
  • Embrace one-pan meals: One-pan meals are a great way to simplify your cooking and reduce cleanup. There are countless recipes out there for sheet pan or tray-bake dinners (check out my YouTube for one-pot and tray-bake recipes), stir-fries, and one-pot meals that are quick, easy, and delicious.
  • Meal prep: Meal Prep or batch cooking can save time during busy weekdays when you may not have the time or energy to cook from scratch every day. By spending some time in advance to prepare meals in big batches, you can have ready-to-eat or half-cook meals available when you need them, reducing the time and energy spent cooking on a daily basis.
  • Keep your pantry stocked: Make sure you have a well-stocked pantry with basic essential ingredients like pasta, rice, canned beans, canned tomatoes, stock cubes and spices. This will make it easier to throw together a quick and satisfying meal on busy weeknights.
  • Don’t be afraid of leftovers: Leftovers are a great way to save time and reduce waste. Cook a big batch of your favourite recipe and enjoy it more than one time throughout the week.
  • Experiment with flavours: Just because you’re keeping things simple doesn’t mean you have to stick to boring flavours. Experiment with different herbs, spices, and sauces to create new and interesting flavour combinations.

Ingredients
  

  • 3-4 Chicken legs
  • ½ Medium onion Finely chopped
  • 2 tbsp Butter
  • 200 gm Mushrooms Cleaned and sliced
  • 4 cloves Garlic Minced
  • 1 cube Chicken -OR- 1 cup of Chicken broth
  • 1-2 tea-spoon Apple cider vinegar
  • ½ cup Heavy cream
  • ½ cup Water
  • Fresh or dried thyme
  • Salt and black & white pepper to taste
  • Fresh parsley or/and thyme to garnish
  • Few dashes of olive oil infused with truffles

Serving with Mashed Potatoes and boiled (and blanched) Broccoli tenders.

Instructions
 

  • Season the chicken legs with salt and pepper on both sides.
  • In a large pan, heat the butter over medium-high heat. Add the chicken legs and cook for 3-4 minutes each side until browned. Remove the chicken legs from the pan and set aside.
  • In the same pan, add more butter if needed. Add the onion and cook until they are translucent.
  • Now add the sliced mushroom to the pan and cook until they release their moisture and start to brown, about 4-5 minutes.
  • Add the minced garlic, herbs, black and white pepper and salt too and cook for an additional 1 minute until fragrant. Stir occasionally.
  • Pour in the chicken juices, water and apple cider vinegar to deglaze the pan, scraping up any browned bits from the bottom.
  • Add the heavy cream. Stir to combine.
  • Bring the sauce to a simmer and add the chicken legs and also crumble up a stock cube to the pan. mix all together.
  • Cover the pan, reduce the heat to low and let the chicken legs cook in the sauce for 30-40 minutes, or until the internal temperature of the chicken reaches 75°C (165°F) and the sauce has thickened.
  • Taste the sauce and adjust the seasoning with salt and pepper if needed. Check out our video tutorial.
  • Serve the chicken legs with the creamy garlic mushroom sauce over mashed potatoes or cooked rice, pasta, or/and with some greens of your choice. Garnish with fresh parsley, if desired.
