Mediterranean Rainbow Quinoa Salad
Eating a healthy diet can help boost our immune system and protect us from seasonal colds and flu as well as other health problems.
It feels like cold and flu are taking over us more than ever nowadays. In order to stay safe from it we need to eat healthy, stay hydrated more by drinking plenty of water, get enough sleep and practice good hygiene such as washing our hands frequently and covering our mouth and nose when coughing or sneezing. Most importantly, we need to change our eating habits to fortify our body’s immune system. I believe healthy food can heal us and help us to fight diseases.

I make my Mediterranean Rainbow Salad with simple and fresh vegetables like tomatoes, cucumbers, onions, carrots, beets red cabbage, avocado and pepper mixed with chickpeas and quinoa and toss it all in a herby, sweet and tangy homemade vinaigrette!

Ingredients
- 1 cup quinoa cooked
- 1 cup chickpeas cooked
- 1 cup avocado chopped
- 1 cup lettuce chopped
- 1 cup red cabbage chopped
- 1 cup tomatoes diced
- 1 cup cucumber diced
- 1 cup red onion diced
- 1 cup bell pepper any colour, diced
- 1 cup carrots and beets Julienne/grated
Vinaigrette:
- 2 tbsp apple cider vinegar
- 2 tbsp extra virgin olive oil
- 1 tbsp French mustard
- 1 tsp wholegrain mustard
- 2 tbsp pomegranate molasses
- 1 tsp garlic purée
- 1 tbsp honey
- Salt pepper and cayenne pepper to taste
Instructions
- In a large bowl, combine everything starting from the vinaigrette and toss to coat.
- Garnish with handful of parsley and season with salt and pepper to taste.
- Serve immediately, or refrigerate until ready to serve. Enjoy!
