I just love this forgotten Courgette (Turai) Curry !
When we were growing up, meal planning was easy since it was easy to keep a track of what was seasonal and what wasn’t and as courgettes are summer produce and Mum has always been in to healthy fresh cooking, it was no surprise that courgette and all the other varieties of seasonal produce were common dishes at our table and were always cherished by us. But when I moved to the UK, it slipped off my repertoire for some reason until my mother in law cooked it one day!
So cheers to Mums….and to the ridiculously easy and delicious, Courgette curry!!
This is how you cook it.
Courgette/Zucchini Curry
Serve 2 for Quick and healthy Dinner
Ingredients
- Courgette x 3 peel off some of the skin
- Cooking Olive oil x 4 tbsp
- Onion x 1 large or 2 medium roughly chopped
- Garlic x 2 cloves, chopped
- Tomatoes medium x 2, chopped
- Cumin seed x 1 tsp
- Chilli flakes a pinch or as to taste
- Honey x 1tbsp
- Salt and pepper
- Garlic salt (optional)
- Coriander x 1 tbsp. chopped
Directions
Fry Onions in oil on a low heat to translucent, but no colour.
While onion is slowly cooking, part peel and cut the courgette in to small chunks.
Throw cumin seeds, chilli flakes, garlic and the courgette in the pan with the onion.
Stir fry it for couple of minutes on medium heat and then turn the heat down to low.
Add salt and pepper cover and let it cook on a low heat for 10-15 minutes.
Once courgette is tender add chopped tomatoes and cover it again for 10 minutes.
Once tomatoes are soft add honey to balance the tartness and turn the heat up a notch to medium and stir fry for few minutes.
it is done when the courgette and tomatoes are soft and the oil surfaces.
Garnish with coriander and serve hot with soft tortilla or chapatti or a flat bread of your choice
