This quick dinner cooks in a flash and is my little one’s favourite too and leaves more time for me and Mr Q to catch up on Season 4 “House of Cards”, which have recently been available on Netflix without any commercial interruptions, what an exciting end of a busy day!!

- 3 chunky Garlic cloves, finely chopped
- 1 inch Ginger, finely chopped
- 1 tbsp Sriracha Sauce (skip if you cooking for kids)
- 1/2 cup Passata or tomato sauce
- 1 medium Tomato, chopped
- 1 Bay leaf
- 5 Whole black pepper corn
- 1 Cinnamon stick
- 1/2 tbsp Paprika (or to taste)
- 1 1/4 tbsp Turmeric
- 1 1/2 tbsp Salt, (or to taste)
- 1/2 tsp Ground pepper
- 1/2 tsp garam masala or Chinese 5 spice mix
- 3-4 large Potates, cut into quarters
- 2 cup Basmati Rice, I used Tilda
- 1 Green chilli (optional)
- Mint or Coriander to garnish
- 4 1/4 cup hot water from the kettle
Instructions
- In a large frying pan heat the oil and butter on a medium heat and add onions. Stir and fry for a minute or so...until translucent but no colour.
- Add the cumin, garlic, ginger, paprika, turmeric, sriracha, tomatoes and tomato paste, chilli and stir fry it for another minute.
- Throw in the salt, pepper, cinnamon, garam masala, pepper corn and bay leaf.
- Now add potatoes and 1/2 cup hot water, cover and cook for 3-4 minutes on a medium heat.
- Finally add the Rice and remaining hot water stir, cover and cook in a rice cooker for 20 minutes until the rice cooked and the green light appears. Or if you cooking in a normal pot... stir and cook on medium heat but do not cover until you see 70% of the water disappeared and then you turn the heat to the lowest setting and let it cook covered for another 10 minutes.
- Garnish with coriander or mint and Serve hot with Raita and onion-tomato salad...Enjoy!
Hope you like it.
