A few years ago, when beautiful London was my home, me and my bestie Carole used to take walks at lunch time breaks in central London.

When I say walk, I mean….I would usually drag myself along with her as walking is not one of my best talents.

But as you know me…I am driven by the promise of honest good food and since she knows London and healthy eateries like the back of her hand, I used to follow her lead for those walking and talking sprees.

We have explored and sampled many good food places and varieties together in cosmopolitan London – multicultural hot pot. The good old days!

One of our all time favourite was a Noodle bar, near the CityThames link station. Today I am replicating one of the dishes from their menu.

The Ginger Soy Edamame! My Spin on An absolute Japanese Classic starter.

Soy Ginger Edamame

Ingredients
  

  • 250 gm Edamame frozen or fresh(I used tesco frozen Edamame Beans)
  • 1 tsp garlic minced
  • 1 tbsp ginger minced
  • 1 tbsp olive oil
  • 1/2 tsp sesame oil
  • 1/2 tbsp Srirscha sauce bit more for garnish
  • 2 tbsp soya sauace
  • 1 tbsp coriander chopped to garnish

Instructions
 

  • In a wok or pan, on medium heat, add the oil, Edamame, garlic and ginger. Saute for few seconds.
  • Add chilli flakes, salt and Sriracha sauce with a splash of water, stir and cook it covered for 5 minutes.
  • Now it's time to add soya sauce and sesame oil, cover and let it cook further for 3 minutes or until the beans in the pods are al dente.
  • Garnish with chopped coriander and serve it warm as an appetiser or starter. 

These high-protein beans, need to be teased out from their pods with your teeth, are not only fun to eat but extremely addictive too!
