I don’t know about you, but I am not ready for autumn! The last couple of days has been just a little cooler, and the evenings are definitely more crisp…. September is the month our little one starts her first school as well! It is exciting and challenging yet heart wrenching for us…. they grow up so fast.

l will share all about it soon! But first thing first today is the day I tell you all about my easy and delicious Thai chicken satay with Peanut dipping sauce!! 😍

Many countries of South East Asia have different versions of Satay Chicken, but this Thai version is the quickest!
It can be a good addition to outdoor BBQ’s, indoor parties and for fast midweek meal plans! They also reheat really well in the microwave. It can be cooked on the outdoor grill, in the fry pan or under the grill/broiler.

Thai Chicken Satay with Peanut Dipping Sauce

This quick and delicious dish can be a good addition to outdoor BBQ's, indoor parties and for fast midweek meal plans!. It can be cooked on the outdoor grill, in the fry pan or under the grill/broiler.

Ingredients
  

*******For the Chicken********

  • 1 pound chicken tenders or thighs put on (presoaked) wooden skewers
  • 2-3 tbsp Oil
  • fresh coriander to garnish

****For the Sauce and Marinade*****

  • 1 cup chunky peanut butter
  • 1/2 inch fresh ginger
  • 2 big garlic cloves
  • 3 tablespoon brown sugar
  • 2-3 tbsp lime juice
  • 1/2 tablespoon fish sauce optional
  • 2 tbsp soya sauce
  • 1/2 cup water
  • chili or red pepper flakes to taste
  • 1 tbsp honey
  • 1 tbsp sriracha or chilli sauce
  • Salt & pepper to taste.

Instructions
 

1.MARINADE : Pulse chunky peanut butter, ginger, garlic, brown sugar, lemon, soya sauce, fish sauce (optional) salt and pepper with water until smooth. taste and adjust seasoning. Transfer half of the mixture for dipping sauce and set aside and marinate the chicken with the rest, for 10 minutes to 2 hours.

    2.GRILLING :Preheat the grill to high. Place marinated chicken under the grill, spray/brush oil on top of the chicken skewers and grill 2-3 minutes each side until charred and cooked about 7-8 minutes.

      3.DIPPING SAUCE: While the chicken is cooking, place a frying pan on low heat add a splash of oil and chilli flakes, stir fry and add the peanut sauce mixture you have set aside with soya sauce, honey and sriracha. stir and cook for couple of minutes. transfer in a small serving bowl. Garnish with fresh coriander.Serve the chicken skewers hot along with the peanut dipping sauce.
